Introducing Global Citizens: Sustainability

In this course, students focus on building skills around food sustainability that will enable them to become effective global citizens. Students will learn all about food production and security, while also exploring the human digestive system. With this knowledge, students will complete hands-on STEAM projects, connecting concepts learned in class to the real world.

Lesson Overview

Over the course of four lessons, students will explore varying aspects of global citizenship, sustainability and food, and the human digestive system.


In the first lesson, students learn what global citizenship is and why it is important. Students will begin to gain an understanding of sustainability and the pillars upon which it is based. Additionally, students will explore issues around food security and will begin to think critically about solutions to these issues, all while employing real-world skills to STEAM-based projects.


Food is a vital part of our existence and well-being. In this lesson, students will dive into the human digestive system to see exactly what happens to the food we eat. With this knowledge, students will begin to understand the importance of food quality and how this relates to food production and sustainability.


About 71% of the land on Earth is considered habitable, and over half of that land is used for agricultural purposes. Students will learn exactly how food is produced and why so much land is needed. Students will then explore environmental, social and economic impacts to see precisely why these current practices are not sustainable.


We know current food production is not sustainable, but what can we do about it? In our last lesson, students will put their newfound knowledge and skills into practice as they explore and come up with real-world solutions to this question.

Course Level

Beginner Level (Age 5-6)

Students in the Beginner Level will conduct several projects to learn about our food's journey from start to finish. Students in this level will be able to choose to take the course with bilingual support or in English only.


Intermediate Level (Ages 7–12)

Students in the Intermediate Level will learn to reduce food waste by replanting fruit and vegetable left-overs, while exploring composting and alternative planting methods. Students in this level will be able to choose to take the course with bilingual support or in English only.
